Aubergine Pie

Ingredients

  • 1 package of Elzymi Filo Pastry for Pies, 450g
  • 200g feta cheese
  • 200g grated mizithra cheese
  • 200g grated kefalograviera cheese
  • 3 eggs (2 for the filling and 1 to brush the pie with)
  • Olive oil to brush the pastry filo sheets
  • A few drops of whole fat milk
  • Pepper
  • Sesame seeds (optional)

Instructions

    Let the filo pastry sheet defrost according to the package instructions.

    Brush 5 filo pastry sheets with some olive oil and lay them out in an oiled baking tray. In a bowl, crumble the feta cheese by hand. Add the mizithra and kefalograviera cheese, as well as the pepper, and mix. Break the 2 eggs in the bowl with the cheeses, mix and then add the milk and stir well.

    Spread the filling in the baking tray and cover the cheese pie with the remaining 5 filo pastry sheets in the same way, after brushing them with some olive oil. Brush the pie with some more olive oil and score the pieces and then brush it with the egg after lightly beating it.

    Sprinkle the sesame seeds on top (optional).

    Bake in a well-preheated oven at 180°C for 20-30 minutes.
